Nethili varuval-1
Ingredients
nethili meen-500 gms
mix with a little water and make a paste of:
ginger garlic paste-1tsp
red chilli powder 1tsp
coriander powder-2tsp
turmeric powder-1/4tsp
kala namak-1tsp
red colour powder-optional
pepper powder-1tsp
vinegar or lime juice-a few drops
Method
Mix the nethili and the paste well so that the masala paste coats the fish well.
Deep fry in hot oil and garnish with coriander and mint leaves and serve.

Nethili varuval- 2
Ingredients
Dry Fish (Nethili) - 100gms
2> Chilli Powder - 2 spoons
3> No Salt
4> Oil - 4 spoons
Method
Step 1
Clean Nethili with running water.
Marinate Nethili with Chilli powder and then keep aside for 15 minutes
Step 2
Pour oil in pan and fry nethili.

Vanjiram Meen Varuval
Ingredients
Vanjiram Fish- 2
Turmeric-1/2 tsp
Chilli Powder-1 tsp
Salt-as required
Sambar Powder-1 tsp.
oil-4 tbsp
Method
Make a thick paste of turmeric, chilli powder, salt and sambar powder.
Add water little by little and smear the masala on fish.
Heat oil in Dosa pan and fry fish on medium heat.
Sprinkle lemon juice on fish when done.
Note:
Vangiram Fish is very meaty. It requires little patience to cook it on Dosa pan with less oil and medium heat.

Prawn Thokku
Ingredients
Prawns- 30 (shelled,deveined)
onion- 1 (big,chopped)
ginger garlic paste- 2 tsp
tomato- 3/4 (big,chopped)
turmeric powder- 1/2 tsp
sambar powder- 2 tsp
salt
curry leaves
Method
Heat oil in kadai and fry onions until golden brown.
Then add ginger garlic paste and turmeric.
Now add tomatoes, sambar powder and salt.
When soft, add prawns and 1/2 cup water.
Cook until half done.
Add curry leaves.
Remove lid and allow to dry until you reach the desired consistency.

Sura Puttu
Ingredients
sura - 2 pieces
pattai- 1
cloves-2
onion- 1 (small,chopped)
garlic- 10(finely chopped)
curry leaves
turmeric- 1/2 tsp
green chillies- 3
pepper- 1/4 tsp
Method
Boil Sura in a closed vessel with some turmeric and salt.
Cook for 20 mins and then switch off gas.
Remove sura from water and peel of skin.
Crumble the fish and set aside.
Heat oil in pan and fry pattai and cloves.
Then fry onion, garlic , green chillies and turmeric.
Then add sura and salt.
Keep frying until color changes.
Finally add pepper and curry leaves.

Sura Puttu-2 Nandu Masala
Ingredients
Crab - 5 nos
Onion- 1 1/2
To grind:
garlic- 6 pods
ginger- 2" piece
sombu-1tsp
jeera-1/2 tsp
pepper-1/2 tsp
sambar powder-2 1/2tsps
turmeric powder-1/2 tsp
coconut - 1/2 cup (scrapped)
tomato- 2
Method
Prepare a fine masala paste by grinding all from garlic to tomato.
Finally add onions and just grind it just a bit.
Heat oil in a kadai.
Add ground masala and salt.
Saute until raw smell goes and color changes to light brown .
Now add crab, 1/2 cup water and close the kadai.
Boil for 15 mins on medium-high heat.
Remove lid and cook till desired consistency.

Nandu Varuval
Ingredients
1 large size Dungeness crab
10 Dry Red chilies
1″ Ginger
10 cloves Garlic
2 shallots
1 cup Coconut
1 tbsp Cumin
1/2 tbsp Pepper
1 tsp Fennel seeds
1″ Cinnamon
2 Tomatoes diced
A few Curry Leaves
Salt
Oil
Method
Clean the crab and cut into 6-8 pieces. Remove the top shell.
Grind the ingredients 2-10 to make a coarse paste.
Heat oil in a frying pan and sauté the crab pieces along with the tomatoes for about 3 minutes
Add the ground masala paste to the pan and sauté for another 5 minutes
Add half a cup of water and salt to the pan, cover and cook on medium heat for about 15 minutes.
Uncover, increase the heat to high, and fry it till most of the water is evaporated to form a thick gravy.
Serve it with rice.

Yera vadai
Ingredients
1> Prawns - 1/2 Kg
2> Green Chillies - 5
3> Saunf Powder ( Sombu Powder) - 3/4 spoon
4> Coriander Leaves - 1/4 Bundle
5> Finely Chopped Onion - 1 pc
6> Finely Chopped Carrot 1/2 pc
7> Marie Biscuit or Rusk - 3 pc
8> Dalia(Odachakadalai) - 5 spoons
9> Lemon Juice - 3 spoons
10 > Salt to taste
Method
Step 1 :
Grind in Mixie(NO WATER) 7 / 8 from above
Step 2 :
Clean Prawns in Running water (Use turmeric to clean)
Step 3 :
Mix 1 / 2 and grind (dont grind too much.Should be like 1/2 ground)
Step 4 :
Mix with Step 3 result all from the above 3 / 4 / 5 / 6 / 9 / 10
Step 5 :
Mix result of Step 4 and Step 3 ( Taste and see if something is less pl add the same)
Step 6 :
Pour Oil in PAN once the oil is hot make the result in step 5 into small round coins and fry.

Karuvaatu kozhambu
Ingredients
1> Dry Fish - 100gms
2> Black Beans(Mocha kotta) - 75gms
3> Egg Plant(Brinjal / Kathirikai) - 3 (Each cut into 4 pieces)
4> Onion - 1 Finely Chopped
5> Tomatto - 1 Finely Chopped
6> Vendhiyam - 1/2 spoon
7> Curry Leaves - 15 leaves
8> Tamarind - 10gms(Make this as a paste)
9> Turmeric - 1/2 spoon
10> Red chilli Powder - 1 spoon
11> Coriander Powder - 2 spoon
12> Salt to taste
13> Oil 5 spoons
14> Coconut milk - 1 cup(50ml)
Method
Step 1 :
Fry 2 in an empty plan for 5 minutes in medium sim (No oil)
Step 2 :
Soak Step1 result in a glass of water for 1 hour
Step 3 :
Pour Oil in PAN and then fry 6 / 7 and then 4 / 5 and fry well in the same order
Step 4 :
Pour Tamarind paste and couple of glasses of water
Step 5 :
Put 9 / 10 / 11 and mix it well
Step 6 :
Add 3.Once the contents in step 6 gets boiled.Add Step 2 stuff here and let it boil once.
Step 7 :
Check all the above are well cooked and then put 14 and after one boil.Put Dry fish and then let it boil once atleast and then remove the pan from flame.
Step 8 :
Karuvadu Kolambu is ready
