Chicken Fajita Onion Rings

Ingredients:
2 cups shredded chicken
1½ tbsp fajita seasoning
1 cup cheddar cheese
3 onions, sliced and separated into onion rings
Oil, for frying
¾ cup cream cheese
2 eggs, beaten
2 cups crushed nachos
1 cup plain flour
How to make them:
Place shredded chicken in a bowl with the spices, cheddar and cream cheese. Mix to combine.
Put onion rings on a lined baking sheet. Fill with chicken mix. Cover and freeze for 1 hour.
Dust each ring in flour, shake off excess, and briefly dip in egg then nachos.
Fry for 4 minutes at 170°C.
Serve with sour cream as a dip.
