Caramelized Soy Sauce Noodles with Sweet Potato and Mushrooms



Have you thought about doing carb on carb kind of dishes?
You would be surprised to know that it’s a brilliant combination.
Here to prove it with this noodles recipe. The earthiness of the mushrooms and the natural sweetness of the sweet potato are amazing when combined with the caramelized soy sauce noodles. Also, the toasty flavor from the stir-frying process will keep you craving for more!


Ingredients:

1 ½ tablespoons soy sauce

1 tablespoon dark soy sauce

1 tablespoon/ one cube chicken stock

½ teaspoon sesame oil

1 tablespoon brown sugar

3 tablespoons water

6 tablespoons vegetable oil, divided

1 medium sweet potato, peeled and julienned

8 oz. shiitake mushrooms, thinly sliced

1 pound fresh yakisoba, udon, or lo mein noodles

2 tablespoons each finely chopped cilantro and scallion (optional)


Method:

1) Heat 3 tablespoons of oil in a wok over medium high heat and add the sweet potatoes. Stir-fry for about 5 minutes until they are brown. Remove and keep it aside.

2) Then, add another 3 tablespoons of oil to the wok over medium high heat. Stir-fry the mushrooms until they are softened and slightly browned. Splash in a little more oil if it’s too dry.

3) Now, crank up the heat to high. Add in the noodles, cooked sweet potato and sauce mixture.

4) Stir-fry and quickly toss everything together. Sprinkle with cilantro and scallion.

5) Serve and dig in!
