Burgers Recipes

The burger is the ultimate choice for a quick, easy and filling bite on the go. There are endless variations when it comes to making home-cooked burgers, both with regards to the filling and the bread used to surround it. They can be served with salad, buns,or plain chutneys and relishes. Burgers can be barbequed, deep fried or baked in oven. The burger is a versatile and probably the world's favourite fast food.



Fish Fillet Burgers Recipe




Ingredients:
Fish Fillets - 4, boneless
Lemon Juice - 2 tsp
Mixed Herbs - 1 tsp
Red Chilli Powder - 1 tsp
Olive Oil - 2 tblsp
Salt as per taste
Burger Buns - 2
Cheese Spread - 4 tblsp
Mixed Sprouts - 1/2 cup


Method:
1. Mix salt, red chilli powder and lemon juice in a bowl.
2. Rub this on the fish fillets and keep aside to marinate for 10 minutes.
3. Heat olive oil in a non-stick pan.
4. Grill the fillets on both sides for about 2 minutes.
5. Sprinkle herbs and keep aside.
6. Cut the burger buns into two pieces horizontally.
7. Spread the cheese spread and place one fillet on each of the halves.
8. Top with sprouts and close with the other half.
9. Serve with salad of choice or with fresh fruits.

Paneer Burger Recipe




Ingredients:
Burger Buns - 2
Green Lettuce Leaves - handful, crisp
Paneer - 3/4 cup, grated
Cabbage - 1/4 cup, finely chopped
Corn Kernels - 1/8 cup, boiled
Walnuts - 2 tblsp, coarsely ground
Onion - 1/2, chopped
Maida - 2 to 3 tblsp + 2 tblsp
Vegetable Seasoning Powder - 3/4 tbslp
Oregano - 1/2 tsp
Mustard Paste - 1/2 tsp
Tomato Ketchup - 1/2 tblsp
Soya Sauce - 1 tblsp
Pepper - 1/8 tsp
Sesame Seeds - 2 tblsp
Water - 1/4 cup


For the herb mayonnaise dressing:
Mayonnaise - 2 tblsp
Coriander Leaves - 1 to 2 tblsp
Milk - 1 1/2 tblsp
Pepper - a pinch


For the vegetable seasoning powder:
Garlic Salt - 1 tblsp
Garlic Powder - 1 tblsp
Dried Onion - 1 tblsp, minced
Onion Powder - 1 tblsp
Salt - 1 tblsp


Method:
1. Mix all the veg seasoning powder ingredients and keep aside.
2. Mix all the herb mayonnaise dressing ingredients and keep aside.
3. In a bowl, mix the sesame seeds, 2 tblsp maida and 1/4 cup of water.
4. In another bowl, mix the paneer, cabbage, corn kernels, walnuts, onion, mustard seeds, veg seasoning, oregano, ketchup, soya sauce and pepper.
5. Divide the mixture into 2 portions and shape into round patties.
6. Dip each patty in the sesame-maida batter.
7. Heat oil in a pan.
8. Deep fry the patties for 2 to 3 minutes or till brown and cooked through.
9. Remove and drain excess oil.
10. Halve the burger buns and lightly butter one side.
11. Toast them on a pan till crisp on both sides.
12. Put the lettuce leaves on the bottom half.
13. Place a patty and spoon some herb mayonnaise mixture.
14. Cover with the top half.
15. Serve hot with ketchup.


Tip:
1. To keep the lettuce crisp till serving time, dip them in cold water.
2. You can also add onion rings, pickled jalapenos or cucumbers on top of the patty.

Hamburgers Recipe


Ingredients:
Minced Beef - 750 gms
Breadcrumbs - 1/2 cup
Milk - 1/3 cup
Onion - 1, chopped
Worcestershire Sauce - 1 tblsp
Burger Buns - 6
Salt as per taste
Pepper


For the Topping:
Butter - 30 gms
Onion - 1, sliced into rings
Mushrooms - 1 cup, thinly sliced
Worcestershire Sauce - 1 tsp


Method:
1. Mix the ingredients for the hamburgers, except the buns.
2. Divide the mixture into 6 portions and shape into patties.
3. Grill for about 15 minutes till cooked.
4. To make the topping, melt the butter in a frying pan.
5. Fry onions till transparent.
6. Add the mushrooms, salt and pepper.
7. Fill each bun with a patty.
8. Top with the onion, mushroom mixture.
9. Serve hot.

Chicken Satay Burger Recipe


Ingredients:
Chicken Breast - 300 gms, boneless and skinless, chopped
Chicken Thighs - 300 gms, boneless and skinless, chopped
Red Chilli Paste - 2 tsp
Red Onion - 1, finely chopped
Coriander Leaves - 4 tblsp, chopped
Egg Yolk - 1
Breadcrumbs - 50 gms
Salt as per taste
Pepper


For the Satay Sauce:
Crunchy Peanut Butter - 200 ml
Coconut Milk - 250 ml
Soy Sauce - 2 tblsp
Red Chilli - 1, finely chopped
Ginger - 1 inch piece, peeled and grated
Garlic Cloves - 2, crushed
Juice of 1 Lime
Grated Rind of 1 Lime
Sweet Chilli Sauce - 2 tblsp


To Serve:
Cucumber - 1/2, cut into circles or ribbons
Coriander - small bunch
Lime - 1, cut into wedges


Method:
1. Mix together all the ingredients for the satay sauce in a small pan.
2. Bring to a boil and simmer, stirring continuously, for 2 minutes.
3. Remove from the heat and set aside until required.
4. Mix together all the burger ingredients.
5. Divide this mixture into 12 portions and shape into balls.
6. Flatten these balls slightly to make burger patties.
7. Cover and chill for 30 minutes.
8. Heat a pan over medium heat.
9. Brush the burgers with a little oil.
10. Cook for about 4 minutes on each side or until cooked through.
11. Remove and drain.
12. Garnish the burgers with cucumber, coriander and lime wedges.
13. Serve with a bowl of satay sauce.

Mushroom Burger Recipe


Ingredients:
Mushrooms - 4, large, flat
Garlic Cloves - 4, finely chopped
Thyme - 2 tblsp, chopped
Olive Oil - 3 tblsp
Red Capsicum - 1, cut into 4 large slices and roasted
Cheese - 150 gms, cut into 4 thick slices (preferably Goat's Cheese)
Butter - 50 gms
Fresh Breadcrumbs - 125 gms
Grated Rind of 1 Lemon
Parsley - 4 tblsp, finely chopped
Salt as per taste
Pepper


To Serve:
Large Burger Buns - 2
Rocket Leaves - 100 gms


Method:
1. Place the mushrooms in a baking tray.
2. Sprinle them with garlic and thyme.
3. Drizzle over the olive oil and cook in a preheated oven at 200C/400F for 10 minutes.
4. Place a slice of red capsicum and a slice of the cheese on each mushroom.
5. Heat the butter in a nonstick frying pan.
6. Fry the breadcrumbs, lemon rind and parsley for about 3 minutes.
7. Spoon the breadcrumb mixture over the mushrooms.
8. Season well with salt and pepper.
9. Return the burgers to the oven and roast for another 5 minutes until the top is golden and the cheese has started to melt.
10. Halve the buns and toast them.
11. Top each half with rocket leaves and a mushroom.
12. Garnish with extra rocket leaves.
13. Serve.
