INGREDIENTS :
Mustard and Cumin Seeds - 1 tsp each
Brinji leaves - 2
Capsicum - 1
Onion - 1 small chopped
Coriander leaves
Turmeric powder - 1/2 tsp
Potato - 3 medium
Cauliflower florets - 1 cup
Chilli powder - 1 tsp
Garam masala powder - 1/2 tsp
METHOD OF PREPARATION :
1) Heat oil in a pan . Once hot , splutter mustard and jeera . Then add brinji leaves, chopped capsicum and onion . Saute onion till tender and golden brown.
2) Add the veggies .
3) Simmer to slow flame . Mix all the spice powders and salt . Cover with a lid and cook till soft .
Serve with Roti / Rice .
