Mutton n brinjal Gravy goes well as side for Chappathis, parathas as well as steamed idlies n Crispy Dosais, i learned this from my French friend but i changed this gravy according to my taste n with our spices..give a trial friends..
Ingredients
¼ kg Mutton pieces
1 no Onion(chopped)
1 no Tomato(chopped)
1 tsp Ginger(chopped)
5 nos Garlic pods
3 nos Green chillies
5 nos Brinjals
2 nos Bay leaves, cloves n cinnamon sticks
¼ cup Coconut(grated)
1 T Coriander seeds
1 tsp Fennel seed, peppercorns n cumin seeds
Cilantro leaves for garnishing
¼ cup Oil
Instructions
Pressure cook the mutton pieces with turmeric powder,1 tsp of ginger pieces n salt upto 3 whistles..heat 3 tsp of oil in a kadai..add the onion pieces to the hot oil, tomatoes pieces, ginger n garlic pieces , green chillies one by one n cook them well..cut the brinjals into small pieces, once the veggies r well cooked add the brinjal pieces..cook them well too..once they r done, put off the stove n keep aside…
Take a Mixie jar r food processor, add the already cooked veggies with fennel seed, pepper corns ,corriander seeds, cumin seeds n grated coconut with a cup of water n grind them well..now again heat the rest of the oil in a kadai, add the whole spices to the oil n fry them until they turn brownish, add the grounded paste to the whole spices, keep the flame in simmer, n stir them continously for 15 minutes, add the cooked mutton pieces (can add the mutton cooked water as per need r else can drain them )to the gravy n add salt as per need..cook them for a while until the oil gets separates from the mutton n brinjal gravy, do this in medium flame with lid closed..garnish with cilantro leaves..
Delicious Mutton n Brinjal Gravy is ready to have..serve hot..Different gravy goes really well with chappathis, parathas, idlies n dosais..can also have with hot rice with papads r chips..
