Rich Fruit Cake

Ingredients

250g all purpose flour
2tsp baking powder
4 eggs
150 sugar
150g margarinemelted
200g candied fruitsmixed with 150g raisins, soaked in 50ml brandy or water
1 vanilla podor vanilla essence to taste
 margarine for greasing mould

Instructions

Preheat oven at 180˚C.
Sift flour and baking powder together. Cream egg and sugar, add in flour and the rest of the ingredients. Mix well. Cast into a cake mould and bake around 45 minutes.
