Mushroom Masala

Ingredients:

1. Mushrooms
2. Garlic
3. Ginger
4. Dry red chili
5. Mustard seeds
6. Onions -1
7. Tomato - 1/2
8. Oil
9. Salt to tatse

Masalas Required:

1. Chili powder - 1 tablespoon
2. Turmer powder - 1/2 teaspoon
3. Corinder powder - 1/2 tablespoon
4. Chicken masala - 1/2 tablespoon

Procedure:

Chop onions into very small pieces and keep aside. Also chop the Ginger, Garlic and tomatoes into small pieces. Take a pan and pour oil. I always use Olive oil (as its healthier ) , but any cooking oil can be used. When oil becomes hot put Mustartd and allow to Splutter. Then add the dry red chili and stir for 1 sec, be careful the chili shouldn't  get burnt. Now add the Garlic,Ginger and stir for 2 secs then add the Onion. Stir till golden brown and add tomato. Stir it for 2 mnts on medium heat. After that let this mixture cool down for sometime, then grind it and make a smooth paste.

Now cut the Mushrooms and keep aside. Don't cut and keep the mushrooms for long time , as the freshness will go. So its better if we cut the Mushrooms just before use. Switch on the stove and in the same pan we used before, pour the onion paste that we made. Cook it for some 2 mnts,so that the rawness will go. Then goes in the Masalas, Chili powder,Turmeric powder, Corinder powder, Chicken masala . Add Salt also and cook. Now put the Mushroom, we dont have to add extra water into the curry ,because Mushrooms will release water from itsself. Cook the Mushrooms for some time(10 mnts-12 mnts)  and keep stiring in between. Cook without covering the lid. Make the curry dry.

Garnish the curry with Corinder leaves. Mushroom masala goes good with Fried rice, Roti etc..
