Brinjal Bajji




Ingredients:
For the Batter:
Bengal Gram Flour - 2 cups
Redchillie Powder - 2 tsp
Rice Flour - 2 tsp
Salt - to taste
Baking Soda - a small pinch

Brinjal - Big Variety 1 cut into slices
Oil - for deep frying

Method:
Cut the brinjal into thin slices and keep them in a vessel filled with water. This is to avoid the brinjal becoming black. Prepare the batter by mixing Bengal gram dal powder, Rice flour, Red chillie powder, salt and Baking soda. The consistency of the batter should be that of Dosa batter.



Heat oil in a heavy bottom pan and when its very hot, dip the sliced brinjal in the batter and deep fry in the hot oil.



When both the sides are golden brown, remove on to a absorbent paper and serve hot. You can have it with curd rice along with coconut chutney or as an evening snack.
