Orange Rasam

There are various types and methods to make rasa, and rasam is usually famous when we fall sick or if we intend to consume a light meal. The famous type of rasam that we commonly hear or see is lemon rasam, pepper rasam or the normal (plain) rasam. Here is how you make orange rasam:

Ingredients:
 
1)Thuvaram paruppu 2 tablespoon
2)Tomato -1 roughly chopped
3)Orange-1
4)Salt-to taste
5)Orange juice- 1/2 orange
6)Lemon juice-1/2 lemon
7)Hing/ Paerunkayaa Thool
8)Corriander Leaves- For garnishing

For grinding:

1)Thuvaram paruppu- 1 tablespoon
2)Coriander seeds(Kothamalli)-1tablespoon
3)Peppercorns-(kmilagu)-1/2 teaspoon
4)Chilli-1
5)Ghee-1 teaspoon

For Seasoning:

1)Ghee-1 tablespoon
2) Mustard Seeds- 1 teaspoon
3)Karuvepillai- few
4)Pepper-cumin powder- 1/2 teaspoon

Method:

1)Put thuvaram paruppu in a vessel, fill water in the pressure cooker, and allow the dal to cook till it is mushy and soft. Mash it nicely and leave it aside.
2)Heat 1 teaspoon of ghee and all the grinding ingredients, roast it till it is golden brown. Leave it aside and allow it to cook.



3)Take these ingredients in a mixer jar, grind it till it becomes smooth powder. Fresh rasam powder ready.





4)Take an orange grate the zest and leave it aside:





5)In a sauce pan, add tomatoes, orange zest, curry leaves, salt, hing powder. Add 2 cups of water and allow the rasam to boil till the tomatoes is cooked nicely.





6)Then add the mashed paruppu, and stir well. Add 2 cups of water and adjust the consistency:





7)When forthy layers start to form, switch off the flame. Do not allow the rasam to boil, heat the ghee in a pan, Add mustard seeds and allow it to sputter. Remove from the flame and add the seasoning to the rasam.





8)Allow the rasam and then add orange and lemon juice. Finally garnish with freshly chopped coriander leaves:





9)Serve the orange rasam along with a cup of rice and a teaspoon of ghee. Enjoy!!!!!
