Title: KUIH LAPIS 🇲🇾 (MALAYSIAN DESSERT)

KUIH LAPIS (8 layers of white and pink with one red color on top so total 9 layers) 220gm rice flour (upto 250gm, depending on your preferred texture) 60gm plain flour 60gm corn flour Whisk well dry ingredients in a large mixing bowl and set aside
700gm water boil with 200gm sugar, 1 tsp salt and pandan leaves for 10 minutes to infuse pandan aroma, set aside to cool down for 15 minutes, discard pandan leaves then mix with 250gm coconut milk
Mix wet to dry ingredients, whisk well and pour through a sieve to remove lumps. Divide batter into 3 portions (if making 3 colors, 620gm for plain (white) and 620gm for light red and 200gm for darker red which is the top layer)
Heat up wok with water for steaming. Wrap lid of wok with cloth to prevent the steam from wetting the kueh. Grease 7 inch square pan with coconut oil and line bottom with banana leaf (grease with coconut oil too)
When water comes to a boil, put in your pan and gently ladle in a layer of either the white or red batter, cover the wok with lid and steam for 7 minutes. Repeat with another layer or another color. Every layer steam for about 7 minutes.
Finish with the last 2 layers of dark red
ALLOW THE KUEH TO COOL DOWN COMPLETELY BEFORE CUTTING WITH PLASTIC KNIFE
