Ingredients:
Water - 2 cups
Chinese Green Tea - 1/2 tsp
Sugar - 2 to 3 lumps
Mint Leaves - 1/2 bunch, washed, dried
Method:
1. Boil the water over moderate flame.
2. Place the green tea in a small teapot and add 1 or 2 glasses of boiling water.
3. Discard the water but leave the tea leaves in the pot.
4. Add the mint leaves to the pot and fill it with boiling water.
5. Add sugar.
6. To serve, pour it into a glass and pour the contents of the glass back into the pot.
7. Repeat this 3 to 4 times until the ingredients are well mixed.
8. Now serve.

Iced Apple Tea Recipe

Ingredients:
Tea Bags - 2
Boiling Water - 2 cups
Apple Juice - 1 cup, chilled
Lemon Slices - 2
Mint Sprigs - 2
Method:
1. Place the tea bags in a cup and pour boiling water.
2. Allow the tea bags to steep for 5 minutes and then squeeze them gently.
3. Discard the tea bags.
4. Pour in the apple juice.
5. Add 1 or 2 ice cubes to each glass or keep it in the fridge till chill.
6. Garnish with a slice of lemon and a mint sprig.
7. Serve chill.

Pudina Chai Recipe
Ingredients:
Water - 2 cups
Fresh Pudina Leaves - 12
Milk - 1 cup
Cinnamon Stick - 1
Ground Cloves - 1/4 tsp
Ginger - 1 tsp, grated
Ground Cardamom - 3/4 tsp
Black Peppercorns - 1/2 tsp
Honey - 1 tblsp
Method:
1. Bring the water to boil and add the pudina leaves.
2. Remove from fire and keep it covered.
3. Keep it aside and let it steep for about 20 minutes so as to retain the oils present in the pudina leaves.
4. Add the milk and the spices.
5. Stir in the honey.
6. Heat it on a low flame for an additional 15 minutes.
7. Serve hot.

Apple Tea Recipe
Ingredients:
Apple - 1 cup, grated
Sugar - 4 tsp
Green Tea - 2 cups
Bay Leaf - 1 tsp, powdered
Lemon - 1 tsp
Water - 5 glass
Method:
1. In a jar put the green tea and close. Keep aside.
2. Heat a pan over moderate flame.
3. Add apple, lemon, sugar, bay leaf powder and water.
4. Allow it to boil.
5. Stir and close with a lid. Boil for 5 minutes.
6. Drain and Pour the apple water mixture in the green tea jar.
7. Close and keep for 5 to 10 minutes.
8. Serve warm in individual glass.
This is good healthy drink for body pain, cold and also acts as a blood purifier.

Kashmiri Tea Recipe
Ingredients:
Green tea leaves - 6 tsp
Green cardamom seeds - 15
Ground cardamom - 1/2 tsp
Soda bi-carbonate - 1/2 tsp
Full cream milk - 1/2 litre
Fresh cream (malai)
Pistachio - 6 tsp, ground
Water - 6 cup
Method:
1. Take water in a heavy based large pan. Add tea leaves, salt, seeds of green cardamom and bocarbonate of soda.
2. Bring to a boil, reduce heat and simmer briskly until it reduces to 1/3 its quantity.
3. While it is still boiling pour in it about 2-3 cups of cold water or enough water to make four cups in all. Bring to boil and simmer for 4 to 5 minutes. Remove from heat, strain and keep aside.
4. Boil the milk with ground cardamom over low heat. Pour prepared tea water and the milk. Bring to a boil, add salt and simmer for 3 to 5 minutes over low heat.
5. Remove from heat and pour into 6 cups. Pour 1 tbsp of cream or malai over each cup. Sprinkle 1 tsp of pistachio on the top.

Cranberry Juice Tea Recipe
Ingredients:
2 tsp Assam tea
2 cups hot water
1 cup cranberry juice
2 tsp sugar
Juice of half a lemon
Fresh mint to garnish
Method:
Brew the tea in hot water for 5 to 6 minutes and strain.
Once cool grind it with sugar, cranberry juice and lemon juice.
Take a glass with lots of ice and serve it chilled, garnished with fresh mint and lemon slice.

Ingredients:
450 ml water
pared 2 limes
125 gm sugar
2 tbsp candied ginger
1 tbsp honey
juice 5 limes
Method:
Boil the sugar and water with the lemon rind.
Add the chopped ginger.
Stir in the honey and lemon juice.
Freeze overnight.
Scrape out and serve.

2 cups water
1/2 lemon
sugar - to taste
tea leaves
Method:
Boil the water till it bubbles, add sugar and add one pinch of tea leaves and cover.
Immediately turn off the heat. Leave it for a minute.
Cut very thin slices of lemon and put them at the button of the serving glass/cup.
Pour the liquor over it, do not stir. Serve hot.

1 tsp tea powder
5 tsp sugar
1 lemon's juice
10-15 ice cubes
Method:
Make black tea as usual with 5 tsp sugar
Take the tall glass and fill it more than 1/2 with ice cubes
Cool the black tea till only a bit warm
Pour the lemon juice over the ice cubes and also the black tea
Garnish with whole pudina leaves(1-2) and a lemon slice
Note: the tea powder, sugar, lime , etc can be taken in qts as per your taste

Brew the tea in hot water for 5 to 6 minutes. Strain and let it cool.
Now pour it in a grinder and add sugar, mixed fruits and lemon juice.
Take a glass, top it up with ice.
Pour in the tea and serve garnished with fresh mint.

Method:

When the liquid turns green (5-10 minutes), add 1 tsp ground cloves, 2 tsp ground cinnamon, 7 tsp ground cardamom and 15ml ground almond and simmer for 5 minutes.
Strain, add sugar to taste (no milk) and serve with almond flakes.

Water - 1 1/2 cups
Lemon Juice - 1/2 tsp
Honey - 1 tsp or as per taste

1. Bring the water to a boil over medium heat.
2. Reduce heat and allow it to simmer.
3. Add ginger and cover the pan.
4. Boil for 6 to 8 minutes.
5. Strain the water.
6. Add lemon juice and honey.
7. Serve hot.

Lemongrass Tea Recipe

Ingredients:
Lemongrass Stalks - 1/2 cup, chopped
Water - 4 cups
Sugar - 1/8 cup
Method:
1. Heat a large pan filled with water.
2. Bring to a boil and add the lemongrass.
3. Remove from heat and keep aside for 10 to 15 minutes.
4. Remove the lemongrass and add sugar to taste.
5. Stir well and serve hot or with ice cubes.
Tip: Depending on how strong you want, you can increase or decrease the time in step 3

Spiced Tea Recipe
Ingredients:
Cold Water - 2 cups
Milk - 2 cups
Tea Bags - 3 to 5
Whole Cloves - 2
Green Cardamom Pods - 3
Cinnamon - 1 one inch stick
Sugar as per taste
Method:
1. Mix the water and milk in a pan.
2. Bring to a boil.
3. Add the tea bags, cardamom and cinnamon.
4. Simmer for 5 minutes.
5. Turn off the heat and let the tea steep for a few minutes.
6. Add sugar and continue to simmer for 5 minutes. Adjust sugar and milk as required.
7. Strain the tea and serve hot at once.

Iced Pineapple Tea Recipe
Ingredients:
Pineapple Juice - 1 cup
Hot Water - 1 cup
Tea Bag - 1
Lemon Juice - 2 drops
Crushed Ice
Sugar
Method:
1. Dip tea bag and sugar in the hot water to make tea and allow it to cool.
2. Put cold tea, crushed ice, pineapple juice and lemon juice in a mixer jar.
3. Blend well and pour in glasses.
4. Garnish with pineapple or lemon slices.
5. Serve.

Kashmiri Kehva (Herbal Tea) Recipe
Ingredients:
Kashmiri Green Tea (Kahva) - 5 tsp
Saffron - 5 pinches
Cardamoms - 2, slightly crushed
Almonds - 8, chopped
Cinnamon Stick - 1
Clove - 1
Sugar or Honey - 2 tblsp
Method:
1. Boil 3 cups of water along with cinnamon, cardamom and cloves.
2. Add in the Kahva.
3. Let it simmer in low flame for 10 minutes.
4. Meanwhile, dissolve saffron in a teaspoon of water.
5. Strain the tea and add the saffron liquid together with crushed almonds.
6. Sweeten with sugar or honey as required to taste.

Cardamom Tea Recipe
Ingredients:
3 green cardamom pods
2 brown cardamom pods
2 teabags
4 tbsp sugar
milk to taste
Method:
1. Put about seven cups of fresh cold water in a large saucepan.
2. Lightly smash the cardamoms in a pestle and mortar. Add to the water.
3. Bring to the boil.
4. When boiling, add the teabags and sugar.
5. Add enough milk to turn it a pale beige colour.
6. Bring to the boil again and just as it is rising to the top of the pan, switch off the heat.
7. Pour through a strainer.

handful of mint leaves
1/2 litre boiling water
1 tea bag
sugar to taste
juice 1/2 lime
Method:
Place mint leaves in a jug. Pour on hot water.
Infuse with teabag. Sweeten to taste. Cool and strain.
Sharpen with lemon juice and serve with ice.

Black Tea Recipe
Ingredients:
tea leaves
water
sugar- as per taste
Method:
Boil water. Pour about 1/4 cup of the hot water into a teapot, swish it around and throw it (to warm the pot).
Now put 1/2 a teaspoon of tea leaves for each cup into the pot and pour the required number of cups of hot water over them. Leave to rest, covered with a tea cozy for about 5 minutes. Pour out the tea and serve.
Alternatively, boil as many cups of water as you need. Put in 1/2 a teaspoon of tealeaves per cup, simmer for 2 minutes, strain and serve.

Indian Masala Tea Recipe
Method:
Take 1 cup water put to heat. Add 1 1/2 tsp. sugar, 1/4 tsp. chai masala (refer below)
2 pinches cardamom powder, 1 full tsp. CTC leaf tea. Allow to simmer till aroma exudes.
Add 1 cup milk, bring back to boil. Allow to simmer for 2 minutes.
Cover and take off heat. Keep aside for 2 minutes. Strain and serve piping hot.
For Chai masala:
1 cup dried ginger root, 1/2 cup elaichi pods (green cardamom),
1 tbsp. peppercorns, 6-7 2" sticks cinnamon.
Grind all the mixture together into powder.

Basil Tea Recipe
Ingredients:
1/2 cup Basil Leaves (Tulsi Leaves)
21/4th cup Water
2 tsp Tea Leaves or 2 Tea Bags
To taste Sugar
As needed Milk
Method:
1. In a small tea pan bring water and basil leaves to boil.
2. Lower the heat and allow to brew for 3-4 minutes.
3. Now add the tea leaves or tea bags and sugar as per taste.
4. Bring to boil.
5. Turn off the heat and strain it into cups and add milk as per your taste.

Spicy Tea Recipe
Ingredients:
3-4 Tea Spoons/4 Teabags of good tea
A chunk of dry ginger (or fresh ginger if dry isn't handy)
3-4 cardmom pods, crushed (See Note below)
3 Cloves
Small piece of Cinnamon
A tsp of Somph
1 or 2 whole black peppers (optional)
Sugar to taste
Milk
Method:
Bring 2 cups of water to boil.
Add all the ingredients and boil again for about 15 seconds.
Let stand for a minute.
Warm milk in a pot.
Filter tea into cups.
Add milk and sugar and Enjoy.
If you don't like to spend much time, mix all the spices and coarsley grind them. Boil water and add tea and a tsp of this ground spices. Rest is as above.
Note :
Since cardmom is expensive, so peel them and add the skin to my stock of tea leaves. This gives a distinct aroma. Of course you boil the skin with water.

Ingredients:

Masala Chai Recipe
Masala mixture
* 100 grams powdered ginger
* 25 grams cloves
* 100 grams whole black peppercorns
* 60 grams cinnamon, broken small, or 40 grams ground
* 1/2 nutmeg, crushed
* 35 grams green cardamom pods
Procedure:
Combine all of the spices and blend well in an electric grinder. You only need a small quantity for each cup of chai; store the rest for later. A full recipe will keep you stocked full of chai for months.
Chai:
Ingredients (per cup)
* 1/2 cup water
* 1 1/2 teaspoon sugar
* 3/4 teaspoon dried tea leaves - to be traditional, a strong Indian tea such as an Assam is best.
* pinch of masala mixture
* 1/2 cup milk
Procedure :
1. Boil water and milk.
2. Add sugar, tea leaves and masala until the mixture becomes dark (about 5-10 minutes).
3. The longer you boil, the stronger the chai.
4. Strain into teacups to serve.
Optional :
* Let the remaining solids cool and sprinkle them on your plants for an excellent fertiliser.
* Tea masala or garam masala from a store can be used to get around the masala mixture
process, however pre ground spices lose their flavor over time.
* In step one, boil the water and milk separately, and in step two add the tea leaves and masala to
the boiling water, boiling until the tea is as strong as you like. Only then add the milk to the mix.
This can speed up the process without effecting the flavor. This method is often used by
restaurants to serve chai in large quantities quickly as orders are taken.
* Optionally turn off the heat in the end, cover and let sit for about five minutes for a richer flavor.
* Try adjusting the ratio of milk to water. For a richer milky tea, try two parts milk to one part
water.
* Leave out the sugar for a more adult flavor. Sugar can be added while drinking if so desired.
* Try other combinations of South Asian spices. Each region in which chai is commonly available
has its own popular or traditional spice mix. One common addition is cumin seed, though some
may not like the strong distinct fragrance.
